Savory Pie with Zucchini Steps

  • Wash the zucchini and slice them lengthwise to obtain long and thin slices. Arrange them on a grill plate and grill on both sides. Once ready, transfer the slices to a baking tray, season with olive oil, balsamic vinegar, a bit of chopped mint, and some spices of your choice. Set aside. Meanwhile, boil the potatoes in water for about 30 minutes

  • Prepare the puff pastry and roll it out on parchment paper, then place it in a round pan with a 9-inch diameter. Prick the base with a fork. Take the cooked potatoes, peel them, mash them, and put everything into a bowl. Add the egg, salt, pepper, finely chopped chives, half of the grated Grana Padano, and a splash of milk if the mixture is too thick, mix well, and spread it over the base of the pie.

  • Place the grilled zucchini over the potato base, creating a cross pattern as seen in the photo. Add the anchovies in oil, a few pieces of Taleggio cheese, and the remaining grated Grana Padano. Fold the edges of the puff pastry inward, if needed. Brush the surface of the pie with a bit of olive oil. Bake in a preheated oven at 350°F for about 30 minutes, or until golden brown. Remove from the oven and let cool slightly before serving
