Walnut and Chocolate Muffins

Ingredients

  • 1 egg
  • 1/2 cup granulated sugar
  • 1/3 cup sunflower oil
  • 1/2 cup plain yogurt
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 cup walnuts (chopped)
  • 1/2 cup dark chocolate chips
  • orange flavoring (or grated peel of untreated orange)

Steps

To prepare the walnut and chocolate muffins, break the egg into a bowl, add the sugar, oil, plain yogurt, and a few drops of orange flavoring (alternatively, you can add half a teaspoon of ground cinnamon). Mix everything with a hand whisk (alternatively, you can use an electric mixer) until you get a smooth and homogeneous mixture.

Add the sifted baking powder and flour and continue mixing to combine everything. Add the coarsely chopped walnuts and chocolate chips, and mix to distribute them in the batter.

Take the 12-muffin pan, place the paper liners in it, and fill them with 3/4 of the batter. Alternatively, if you don’t have the pan, you can use aluminum liners.

If you prefer, you can decorate the muffins with some whole or chopped walnuts and chocolate chips. Bake in a static oven at 356°F (180°C) for about 20/25 minutes, or in a convection oven at 338°F (170°C) for the same time.

To ensure they are done, do the toothpick test by inserting it into the center of a muffin and removing it—it should come out dry. If necessary, extend the baking time by another 2-3 minutes.

Once cooked, remove the muffins from the oven and let them cool on a rack. When they have cooled, you can enjoy them. If desired, you can dust them with powdered sugar.

Storage

Walnut and chocolate muffins can be stored for 3/4 days in an airtight container.
