Steps

To prepare the eggplants in an air fryer, first wash the eggplants, trim the ends, dry with a tea towel, and cut them into chunks.

In a bowl, add the eggplants, season with the extra virgin olive oil, salt (to taste), and chopped parsley, mixing everything to evenly distribute the seasoning.

Place the eggplants in the air fryer basket and cook at 350°F for 12-15 minutes, turning them a couple of times during cooking. To ensure they are cooked, insert the tines of a fork into the eggplants; if they penetrate easily, you can finish cooking, otherwise, continue to cook for another 2-3 minutes.

Storage
