Steps
To prepare the eggplant sticks in the air fryer, wash the eggplants, cut off the ends, and dry them thoroughly. Cut the eggplants into slices about 0.4 inches thick and then into sticks about 2.8 inches long.
In a bowl, pour the eggs, add a couple of pinches of salt, and beat them with a fork or whisk. Add the eggplant sticks and mix to coat them well with the egg. Then, proceed to bread the sticks with breadcrumbs.
Place the eggplant sticks in the air fryer basket, avoiding overlapping them, spray a little oil with the sprayer (or alternatively distribute a thin drizzle of oil) and cook them at 356°F for 15 minutes, turning them halfway through and giving them another spray of oil.
