The cheerful and colorful holiday pancakes will delight our children.
These delicious pancakes are perfect for celebrating Christmas and any special occasion. I made them for these holidays, but you can make them for any other occasion and theme.
They are made of simple pancakes, and then decorated with mascarpone cream, marshmallows, and colorful sprinkles.
However, the decorations can also vary to your taste.

- 4 egg whites
- 1/3 cup flour (your choice)
- 1 tsp sugar (or erythritol)
- 1.5 tsp baking powder
- 1 pinch salt
- 1/4 cup yogurt (your choice, even fruit-flavored as long as it doesn't have pieces)
- 1/4 cup milk
- 1/2 tsp butter
- 1 1/3 cups mascarpone
- 1/4 cup heavy whipping cream
- 1/3 cup powdered sugar (or 100 g powdered erythritol)
- q.b. food coloring (red and green)
- q.b. marshmallows (or sugar-free decorations as desired click)
- 3.5 oz white chocolate

- 3 Bowls
- 1 Electric whisk or the Bimby
- 1 Stand mixer
- 2 Piping bag with star nozzle
Steps
To prepare
In a bowl, beat the egg whites with the whisk until they are foamy.
In another separate bowl, put the flour, sweetener or sugar, salt, baking powder, yogurt, milk, and mix well.
Using a spatula, gently fold the beaten egg whites into the mixture with upward movements.
Melt 1/2 teaspoon of butter over medium heat in a non-stick pan.
For each pancake, pour a ladle of batter into the pan and cook for 1-2 minutes or until bubbles on the surface start to color.
Flip the pancake with a spatula and cook for another minute. Place the pancake on a flat plate and cover with a cotton cloth to keep it warm. Repeat the process until all the batter is used.
Chop the white chocolate, transfer it to a bowl and melt it in the microwave with 50 ml of cream.
If you don’t have a microwave, you can melt it in a double boiler.
In a bowl or stand mixer, whip the mascarpone with the powdered sugar or powdered erythritol. Once it’s well whipped, gradually incorporate the white chocolate into the mascarpone, keeping the mixer running
When you’ve finished the chocolate and the mixture is smooth, divide the cream into 2 bowls and….
add food coloring drop by drop, adjusting according to the shade you want to achieve.
Now fill two piping bags with a star nozzle and decorate the pancakes as you like
Finish the Cupcakes with marshmallows and sprinkles, or with various other toppings.

Storage
The holiday pancakes The plain pancakes can be stored in an airtight container in the fridge and taken as needed. For the colored cream, you should refer to the expiry date of the products.
