Peach and Banana Ice Cream with Yogurt

The ice cream with peaches and bananas and plain yogurt is a delicious refreshing dessert, egg-free, easy and quick to prepare without an ice cream maker and without turning on the stove. It is a healthy, natural, light ice cream, sweetened with wildflower honey. It is suitable for children and we can use all the fresh fruit that we like. Plain natural yogurt, sweet white, Greek, or fruit-flavored yogurt can be used, even in the lactose-free version. If the fruit used is not very sweet, we can increase the amount of honey up to 3.5 oz.

Ingredients

  • 2.1 cups plain or sweet yogurt (also lactose-free)
  • 1.1 lbs mix of bananas and peaches (weighed already peeled)
  • 3.2 oz wildflower honey
  • 1 lemon
  • 1 pinch fine salt

Steps

Place the ice cream container in the freezer at least an hour before preparing it.

After removing the pits and peeling from peaches and bananas, cut them into chunks and transfer them into a blender cup.

Add the grated zest and juice of the lemon, honey, yogurt, and a pinch of fine salt and blend until smooth, trying to incorporate as much air as possible. The more air we incorporate into our ice cream, the better the final texture will be.

Pour the mixture into the cold freezer container, close it, and put it back in the freezer for at least two hours.

Retrieve your ice cream as it begins to set, blend it again, return it to the freezer, and leave it for about 3 more hours. The peach and banana ice cream is ready.
