Ingredients for the Chicken Breast with BBQ Sauce

  • 2 chicken breasts (each weighing about 1.1 lbs)
  • 3 pinches salt
  • to taste black pepper
  • 2 sprigs rosemary
  • 2 oz extra virgin olive oil
  • 2 oz white wine vinegar
  • 1 oz butter (for cooking the chicken)
  • Half glass white wine
  • 5 oz barbecue sauce

How to prepare the Chicken Breast with BBQ Sauce

  • To prepare the Chicken Breast with BBQ Sauce, first clean the chicken breast, remove the small bone connecting the 2 breasts, and cut the whole breast in half to have 2 complete breasts.

  • In a large baking dish, mix with a hand whisk the extra virgin olive oil, white wine vinegar, salt, pepper, and rosemary needles.

    Immerse the 2 chicken breasts, massage them all over to let them soak up the flavor, then cover with plastic wrap.

  • Let them marinate in the refrigerator for at least 1 hour, the longer you have, the better.

  • In the meantime, prepare the BBQ sauce.

    After the chicken’s resting time, drain it from the marinade and melt the butter in a wide, high-sided pan.

  • Sear the chicken breasts on all sides for at least 5 or 6 minutes, then deglaze with the white wine, allowing it to evaporate over high heat.

  • Lower the heat, cover the pan with a circle of aluminum foil, and cook the chicken breast for 25 minutes, turning only once after 15 minutes.

  • Once cooked, brush the chicken (still in the pan) with plenty of barbecue sauce, turn off the heat, cover with foil, and let it rest for 5 minutes.

  • Put the chicken breast on a serving plate, slice it, sprinkle with more barbecue sauce, and serve it with pan-cooked potatoes or some soft polenta.

The chicken breast can be stored in the refrigerator for 2 or 3 days.
