The Gingerbread Man Cookies are typical for Christmas, very fragrant and tasty, perfect for gifting 🎁 or even for hanging on the Christmas tree 🎄, you just need to be a bit good with royal icing to decorate them, and as you can see in the photo, I was not.

There are cookies with only one eye, others that look like Halloween ghosts, but the important thing is that they are delicious, so try them too.

Of course, you can make Gingerbread Cookies with other Christmas-themed shapes; I think tree, house, or Santa face shapes would fit well.

Ingredients for Gingerbread Man Cookies

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup butter (soft)
  • 1 egg (medium)
  • 1 pinch salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 egg white
  • 1 cup powdered sugar
  • 1 teaspoon lemon juice

How to Make Gingerbread Cookies

  • In a bowl, work the soft butter with the flour using your fingertips until you have a sandy mixture.

  • Add sugar and flavors, finally the salt and the egg, and knead quickly with your hands or a spatula.

    Form a compact and homogeneous dough, then wrap it in plastic wrap and let it rest in the refrigerator for at least 2 hours.

  • After the resting time, roll out the dough to a thickness of just under 0.4 inches and cut out shapes with a cookie cutter.

    Remember to dust the work surface with a little flour, preheat the oven to 320°F in static mode, and line a baking sheet with parchment paper.

  • Bake the gingerbread cookies in the middle rack for 15/18 minutes.

  • In the meantime, prepare the royal icing by placing the egg whites in a bowl and beating them with an electric whisk together with the lemon juice.

  • Gradually add the powdered sugar while continuing to beat at low speed, cover it with plastic wrap in contact, and let it rest in the fridge.

  • When the cookies are baked and cooled, place the royal icing in a pastry bag with the tip slightly cut.

    Decorate the cookies with a steady hand and let them dry overnight before placing them in a tin box or hanging them on your 🎄 Christmas tree.

Storage, Tips, and Variations for Gingerbread Man Cookies

They keep in a tin box for several days, once hung on the Christmas 🎄 tree they will no longer be edible, of course.

You can color the royal icing with 2 drops of gel food coloring to make some different cookies.
