Traditional and Bimby Recipe.
Today it’s very cold, and I quickly prepared this delicious soup enriched with broccoli.
The cannellini beans, when cooked, give a nice creaminess to the dish that you can enjoy with croutons or pasta. If you wish, you can add some chili pepper. I enriched the dish with my homemade vegetable stock cube, click here to see how I make it.
I used canned beans, but if you want, you can use dried ones and pre-cook them yourself. Also, with this recipe, you can use any type of beans.

- 14 oz canned cannellini beans (drained weight)
- 14 oz broccoli
- 1.4 oz onion
- 3.5 oz carrots
- 2 stalks celery
- 2 teaspoons stock cube (vegetable)
- to taste water
- 1 chili pepper (optional)
- 10.5 oz rustic tomato sauce

Steps
Cannellini Minestrone and Broccoli Soup
Drain the beans from their water, but do not discard it, whether you used canned, pre-cooked, or you boiled them yourself.
Peel the carrots and celery and chop the onion. Clean and cut the broccoli into florets.
Roughly chop the carrots, celery, and onion as if making a minestrone. Put them in a pot with extra virgin olive oil and let them sauté for about 3 minutes, stirring occasionally.
After the time has passed, add the tomato sauce and 200ml of the beans’ water, or add regular water. The liquid part should be at least 200 ml, stir and …
also add the previously cooked or canned beans, and the broccoli florets.
Let it cook for about 20 minutes, checking if more liquid is needed.
Then test the broccoli stems with a fork to see if they are cooked, and if necessary, you can extend the cooking time a little.

Serve hot with the addition of croutons.
Put the celery, onion, and carrots in pieces in the bowl and roughly chop for 10 sec at speed 4, then check, stir with the spatula, and if they are still too large, repeat the operation until they have the consistency of a minestrone.
Add extra virgin olive oil and let it sauté at 230°F (110°C) speed 1 reverse
Once the time has passed, add the tomato sauce, the previously cooked or canned beans, their water, and the broccoli florets.
Let it cook for about 20 minutes, at 212°F (100°C) reverse speed spoon, with the steam basket on top, checking through the hole if more liquid is needed.
Then test the broccoli stems with a fork to see if they are cooked, if necessary, you can extend the cooking time a little.

Storage and Tips
Cannellini Minestrone and Broccoli Soup.
This soup can be stored in the fridge for up to 3 days and in the freezer for up to 3 months.
Tips: this dish can also be served with pasta, rice, or grains.
If you want to add them, I recommend doing so halfway through cooking, so they cook together and become creamy.
In that case, you need to add enough water, approximately double the weight of the pasta, rice, or grains, both for traditional and Bimby cooking.
