Sugar-Free Orange Compote.
Traditional and Thermomix recipe.
You can also use tangerines or clementines with the same recipe.
Thinking about fitness and health, today I prepared this compote, different from classic jam, where we will use apples as a natural preservative, as they contain pectin, which allows for good food preservation.
In case you don’t want to use apples, I’ll give you instructions for using pectin available on the market.
It is said that citrus marmalade was invented for Catherine of Aragon, who, having married King Henry VIII of England, could no longer enjoy the fruits of her homeland. Many documents attest that in the Middle Ages marmalade was made with a method very similar to the current one.

- 2.2 lbs oranges (organic ripe)
- 1.5 lbs apples (organic or 1 packet of 3:1 pectin)
- 2.6 oz stevia (Or 8 oz erythritol)
- 1 packet pectin

Preparation: Sugar-Free Orange Compote
Traditional cooking in a pot
The first thing to do is to sanitize jars and lids: the containers where our Sugar-Free Orange Compote will be stored must be perfectly clean and sanitized.
If you want to use apples as a natural sweetener, now is the time to wash them well, do the same with the oranges.
Remove the core and peel from the apples, then cut them into pieces.
Place them in a pot and move on to the oranges
Peel the oranges completely, removing the white part, and cut them into pieces.
Also transfer the oranges into the non-stick pot along with the apples, and add the sweetener.
If you opted for pectin, add it now in the pot instead of apples.
Bring to a boil and continue cooking, stirring occasionally, for at least 20 minutes.
At the end of cooking, if you want a rather smooth compote, you can blend it with an immersion blender, otherwise, you can leave it rustic
Now you can pour the hot compote into the jars.
Clean the edges well and close with the lids.
Turn the jars upside down and let the Sugar-Free Orange Compote cool
Finally check that the vacuum has been formed correctly and turn the jars: the Sugar-Free Orange Compote is ready.
Sterilize the jars and lids, where our Sugar-Free Orange Compote will be stored.
If you want to use apples now is the time to wash them well, do the same with the oranges.
If you are using apples, cut them into pieces, transfer them into the bowl, and add the sweetener.
If you opted for pectin, add it now in the pot instead of apples.
Peel the oranges completely, removing the white part, and cut them into pieces.
Transfer everything into the bowl along with the sweetener, apples, or pectin
Position the basket instead of the measuring cup, cook: 20 min./212°F/reverse/vel. 1.
After the time has passed, blend for 10 sec at vel 5.
Now transfer the compote into the jars and close immediately.
Turn the jars upside down and let cool completely before turning them back over, ensuring that the center of the lid has lowered creating a vacuum

Sanitizing jars during preparation:
arrange the jars and lids in a large pot, covering them completely with water. Bring to a boil over medium heat and boil for 30 minutes. At the end, turn off the heat and keep them warm by covering the pot with the lid. Carefully remove the jars and lids with tongs and dry them completely with a clean cotton cloth.
Cooking the Sugar-Free Orange Compote:
place a saucer in the freezer for 5-10 minutes. At the end of cooking, pour a teaspoon of the compote in the center of the saucer, and when it cools, touch it with a finger; if it has set, it is ready. If the compote is slightly runny, cook for another 2 minutes.
For those making it with Thermomix, cook for 2 min. /Varoma/reverse/vel. 1 with the Varoma container instead of the measuring cup. Repeat the cooking test as previously described.
If the vacuum has not formed, the jam should be stored in the refrigerator and consumed within a maximum of 7 days.
Storage
Label the jars with the name and date of preparation before storing them in the pantry.
The compote can be stored for several months in a cool, dry place away from light.
Consumption:
before using the compote, check that the lid still has the central part lowered; otherwise, it is recommended not to consume the preparation;
Once the jar is opened, consume the contents within 15-20 days and store it closed in the refrigerator.
