The chicken meatballs recipe
Traditional recipe in a pan or air fryer and also Thermomix.
A great novelty is the chicken meatballs made from already cooked chicken.
Surely, you’ve had leftover chicken, perhaps the driest part, which no one wants to eat.
That’s why I’ve come up with this delicious recipe for our kids, and why not, even for adults.
You will find 3 different cooking methods: in the oven, in an air fryer, and finally the classic frying, either in a pan or deep-fried.
Besides being a main course, these delicious meatballs make an excellent finger food and can be served at an appetizer or among mixed fried dishes.
You can also use raw chicken breast, which we’ll cook before using in the recipe.

- 1 cup breadcrumbs
- 3.5 tbsps Parmigiano Reggiano DOP
- 1 clove garlic (optional)
- 1 bunch chopped parsley
- 2 eggs
- to taste salt
- to taste pepper
- to taste roast spices
- 1 cup flour
- 2 eggs
- 1 cup breadcrumbs
- 1 tbsp curry
- to taste extra virgin olive oil

Preparation
Traditional recipe
First, you must decide if you are using raw or cooked chicken breast. In the first case, you need to cook it first, either in the microwave with some spices or simply roast or boil it.
Let’s start with the already cooked chicken.
Place it in a food processor and chop it as finely as you can.
Transfer the chicken to a bowl, where you’ll add the eggs, breadcrumbs, grated Parmigiano, parsley, and chopped garlic,
a pinch of salt and pepper, and the roast spices to taste.
Knead and form balls about 1 inch in diameter.
Now place the flour in one bowl, beaten egg in another, and in the last, seasoned breadcrumbs with salt and spices to taste.
Roll the chicken meatballs first in the flour, then in the beaten egg, and finally in the seasoned breadcrumbs with curry and spices.
Now you just have to cook them, according to your taste or nutritional needs.
Either in the oven at 356°F for 20 minutes.
Or in a pan with plenty of extra virgin olive oil, or finally in the air fryer, at 356°F for 20 minutes in total.
But after the first 10 minutes, you have to turn them over and continue.
Here are the ready Chicken Meatballs, a recycling recipe.
Let’s start with the already cooked chicken, put it in the mixing bowl and chop for 20 sec at speed 10.
Then add the 2 eggs, breadcrumbs, Parmigiano, parsley, and chopped garlic, half a teaspoon of salt and a pinch of pepper and spices.
Mix for 2 minutes at speed 5.
Transfer the mixture to a bowl, knead and form balls about 1 inch in diameter.
Now place the flour in one bowl, beaten egg in another, and in the last, seasoned breadcrumbs with salt and spices to taste.
Roll the chicken meatballs first in the flour, then in the beaten egg, and finally in the seasoned breadcrumbs with curry and spices.
Now you just have to cook them: in the oven at 356°F for 20 minutes.
Or in a pan with plenty of extra virgin olive oil, or finally in the air fryer, at 392°F for 11 minutes, turn them, and then for another 10 minutes.

storage and tips
The chicken meatballs recipe can be stored both raw and cooked in the fridge for up to 2 days and in the freezer for up to 3 months.
Tips: if you want to make them tastier, you can add cubes of provolone, ham, or smoked bacon inside.
