Rice flour cookies with nasturtium flowers, an edible plant used in cooking for its seeds, leaves, and of course, the flower. Nasturtium flowers are yellow and orange, but there are also deep red and cream ones, delicately scented, so they are very loved by bees. I like to use flowers in the kitchen, and whenever I can, I try to use them. I’ve even created a corner in my garden with edible flowers: I love adding color to salads and various dishes. I often use rice flour in my preparations, a product derived from milling rice, because it is gluten-free and therefore ideal for everyone, for those who suffer from celiac disease or are gluten intolerant.

- 7 tbsp butter
- 1/2 cup gluten-free coconut flour
- 2 egg yolks
- 1 egg
- 1 pinch baking powder
- 1/3 cup sugar
- 3/4 cup puffed rice
- 1 tbsp lemon zest

Steps for making rice flour cookies
Early in the morning, as every morning, I have my coffee in the garden and today I noticed that my nasturtium plants had their flowers open in two bright colors: yellow/orange and deep red. I couldn’t resist picking the flowers to use them in my kitchen and, well, I hurried to make some little cookies with rice flour, Easter cookies that are for everyone, even for those who are intolerant or suffer from celiac disease. Also ideal as a sweet thought.
In the glass bowl, put the rice flour with the cold butter. Use the cord food chopper to cut the lemon peel (organic, of course) and add it to the mixture, forming something like shortcrust pastry crumbs.
Add the egg yolks and the whole egg.
Also add the sugar and grated coconut flour with the baking powder. Quickly mix all the ingredients.
Incorporate the puffed rice and form a dough. Let it rest for an hour covered in the refrigerator.
Roll out the dough and cut out small cookies. I used my tool for making falafel, you can use a small cookie cutter, a biscuit cutter or a coffee cup.
Prepare the rice flour cookies and place them directly on the tray with parchment paper.
They would already be ready to go in the oven, but I thought of adding some nasturtium flower petals that I had in the garden.
To give a touch of originality, you can add, as I did, on top of each cookie a petal of the edible nasturtium flower.
With gentle pressure, the flower petals stick immediately to the cookies, nothing else is needed.
Put in a preheated oven at 350°F for 15 minutes.
