Ingredients
- 25 oz broccoli (any type but only the florets)
- 3.5 oz cooked ham
- 5.3 oz provola cheese
- 14 oz potatoes
- 1/2 cup milk
- 1/4 cup butter
- 1/2 cup Parmigiano Reggiano DOP (grated)
- to taste salt
- to taste nutmeg
- 2 quarters water (iced)
- to taste seed oil
- 1/2 cup breadcrumbs

Steps
Wash the broccoli, and cut them into florets. Bring some water to a boil with a bit of salt, and when it starts to boil, throw them in.
Meanwhile, prepare a glass bowl with iced water.
After 10 minutes, drain the broccoli and immerse them in the iced water to stop the cooking process, then drain them again.
Let’s prepare the puree.
If you don’t have time, you can use the instant one, otherwise boil the potatoes and when they are still hot, mash them with the potato masher, then add the butter, salt to taste, a pinch of grated nutmeg, and the milk.
Mix vigorously with a hand whisk, incorporating air.
While still hot, beat 2 eggs in a dish and mix them together with the puree.
Preheat the oven to 356°F static
Take an ovenproof dish, and brush it with oil, then sprinkle breadcrumbs at the base and on the edgesNow pour all the puree mixture, and arrange the broccoli florets here and there.
Place cubes of provola cheese between them.Cut the slices of ham in half lengthwise, and form roses by wrapping the ham like a flower. Place the ham “roses” here and there to form a garden
Cover the baking dish with parchment paper with some small holes here and there
Bake in the oven for about 30 minutes.
Serve warm.
