Ingredients for preparing the skillet parmesan

  • 2 black oval eggplants
  • Half stalk of celery
  • Half onion
  • 1 carrot
  • 1 3/4 cups tomato passata
  • to taste salt
  • 2 tablespoons extra virgin olive oil
  • 8.8 oz mozzarella
  • 2 tablespoons Parmigiano Reggiano DOP
  • to taste basil

Preparation

  • Prepare the tomato sauce by chopping celery, carrot, and onion. Place the chopped vegetables in a skillet with a drizzle of oil. Add the passata, salt, and basil, and cook for about 30 minutes over low heat, covered.

  • Meanwhile, wash and cut the eggplants into slices which you grill to make a lighter parmesan.

  • Once the ingredients are ready, prepare a non-stick skillet, make a layer with some sauce, place the grilled eggplant slices on top, half of the mozzarella, and season. Repeat these layers. Finish with parmesan and a drizzle of oil.

  • Cover with a lid and cook for about 15-20 minutes. Remove the lid and serve the skillet parmesan hot, although it is actually delicious even when cold.
