Ingredients
- 14 oz mackerel fillets (or other bluefish)
- 2 tbsp extra virgin olive oil
- 17.6 oz Tropea red onion
- 1/4 cup water
- to taste salt
- 1 tbsp roast seasonings (for fish)
- 2 tbsp balsamic vinegar (Or apple cider)
- to taste dried oregano

Preparation
Gut the fish and make fillets. The embedded video can help you, or if you bought the fish already filleted you can skip this option.
Peel the onions and slice them, then place them over the fish completely covering it.
Season with balsamic vinegar, oregano, and fish seasonings. Click to see how I make them at home
Cover with plastic wrap and refrigerate to marinate for at least 6 hours or more.
After the time has passed, transfer the fillets to the Varoma, between container and tray, cover, and set aside.
Put the extra virgin olive oil and onions in the bowl, Close with the Varoma and set 15 min 248°F counterclockwise speed spoon.
After the time has passed, remove the Varoma, Add the water and salt, bring to the bottom of the bowl and cook: 8 min./248°F/counterclockwise/speed spoon.
Serve after it has cooled down.
