Traditional and Bimby recipe for asparagus soup with meatballs.

- 10.5 oz ground beef (or chicken or turkey or fish)
- 1 egg
- 2.1 oz breadcrumbs
- 1.1 oz Parmigiano Reggiano DOP
- 1 clove garlic
- 1 bunch chopped parsley
- to taste salt

- 1.75 lbs asparagus
- 1.4 oz Parmigiano Reggiano DOP
- 1.8 oz light cream cheese
- 3 cups vegetable broth
- 0.7 oz flour
- to taste salt
- to taste pepper

Preparation: Asparagus Soup with Meatballs
Traditional recipe
Prepare the meatballs: finely chop the spices and in a bowl, combine the ground meat, Parmigiano, egg, salt, and pepper to taste. Knead.
Make meatballs about 0.75 inch in diameter.
1) Option- Fry them in a pan with olive oil and a sprig of rosemary.
2) Option- Cover them with plastic wrap and microwave for 10 minutes.
3) Option- In an air fryer for 5 minutes at 356°F
Now prepare the asparagus soup.
Clean the asparagus by removing the woody parts, remove the tips, and wash well in cold water.
Chop finely using a food processor or knife.
In a bowl, combine grated Grana Padano and cream cheese, and mix with a whisk. Set aside in the fridge.
Transfer the chopped asparagus to a pot with water and salt, and cook for 20 minutes.
After the time has passed, blend with an immersion blender. Add the mixture you set aside, return the pot to low heat, continuously blending with the immersion blender until the soup appears smooth.
Adjust salt, and transfer the cream into a soup tureen or individual dishes. Top with the meatballs. Serve accompanied by croutons.

Prepare the meatballs: chop the spices for 10 sec. speed 7. Gather with the spatula, add Parmigiano, egg, salt, and pepper to the bowl. Knead for 2 mi. speed 3.
Transfer the mixture to a bowl and form meatballs about 0.75 inch in diameter.
Once ready, place them in the varoma between the container and tray, cover them and set aside

In the clean and dry bowl, place the asparagus stems and chop for 5 sec./speed 7. Gather at the bottom with the spatula.
Add the vegetable broth, salt, arrange the varoma with the meatballs and cook for 25 min./100°C/speed 1.
At the end of cooking, remove the varoma and let it rest for 1 minute, then blend for 30 sec./speed 7. Gather at the bottom with the spatula.
Add the mixture from the fridge and cook for 2 min./90°C/speed 3.
Adjust salt. Transfer the cream to a soup tureen or individual dishes. Top with the meatballs.
