Let’s start preparing the Almond Teddy Bears: mix the butter in pieces with the egg, sugar, grated lemon zest, and flour in a bowl.
Work the dough with your hands until you get a smooth and homogeneous ball. Cover it with plastic wrap and put it in the refrigerator for about 30 minutes.
After 30 minutes, roll out the dough on a lightly floured surface with a rolling pin. Cut the cookies in teddy bear shape and arrange them on a baking tray lined with parchment paper.
Place an almond in the center of each teddy bear and press lightly, fold the arms of the teddy bear over the almond and press to attach well.
Bake the cookies in the preheated oven at 356 degrees Fahrenheit for about 10-15 minutes until the teddy bears are golden.
