Diet ring cake with clementine smoothie. Today I present a soft cake full of vitamin C, fresh, light, and never dry, it will give you the right boost for your breakfast or snack.
Ideal for both adults and children, it is made without butter and with a sweetener, which you can replace with sugar if you prefer.
For the flour, I used 00, but you can mix it 50% with whole wheat flour or use one with a low glycemic index.
The texture of this cake is very different from what you’re used to; it’s halfway between a sponge cake and a pudding.

- 1 cup oz 0% fat Greek yogurt
- 2 cups oz fresh clementines (or mandarins or oranges, peeled)
- 1 tbsp oz fresh clementine zest (or mandarins or oranges)
- 3 large eggs
- 1.5 cups oz all-purpose flour (Or low G.I.)
- 1 packet baking powder
- 3/4 cup oz sugar (Or 160 erythritol or 40 stevia)

- Stand mixer or Bimby
- Pan ring mold – 9 inch diameter
- Cooling rack
- Bowl
- Brush
- Grater
Preparation: Diet ring cake with clementine smoothie
For all preparations
Take a ring mold (9 inch) and butter and flour the bottom.
Turn on the oven and preheat
to 350°F static.
Peel and blend 2 cups of clementines and divide the smoothie into 2 parts.
Grate the zest of the clementines obtaining about 1 oz.
In a bowl or your stand mixer, add the clementine zest, sweetener, or sugar as per your needs, Greek yogurt, flour, baking powder, and 3/4 cup of clementine smoothie.
Mix the batter until it is well combined.
Skip the Bimby part and proceed to baking for both preparations
Blend 2 cups of clementines for 20 sec. at speed 10.
Divide the obtained smoothie in half.
Place the grated clementine zest with the sweetener or sugar in the bowl, mix: 5 sec./speed 4.
Add the yogurt, eggs, all-purpose flour, baking powder, and 3/4 cup of clementine smoothie, knead: 30 sec./speed 5.
Take back the cake pan and pour the batter.
Bake in a hot oven for 40-45 minutes (350°F) static.
After the time has passed, do the toothpick test, then carefully remove the cake from the oven, unmold it, place it on a cooling rack and set everything on a large bowl.
Let it cool at room temperature.
When the cake has warmed, pour the smoothie gently and wait 2-3 minutes.
Repeat the operation until the smoothie collected in the bowl under the rack is completely absorbed by the cake.
Let it cool completely.
At the end of the preparation, decorate with clementine wedges.
