Teriyaki Tuna Tataki.
Today I take you to Japan, at least with your imagination, with a dish made from a tuna fillet, which is the most prized part of the fish, marinated with teriyaki sauce, sesame crusted, and then grilled.
Teriyaki Tuna Tataki is excellent for diets, especially protein ones. Ideal for lovers of oriental cuisine and raw or lightly cooked fish. You will definitely impress your guests. Ingredients
For the fillet
- 14 oz tuna fillet
- 7 oz sesame seeds
- 1 oz sake
- 0.88 oz sugar
- 1 tsp rice vinegar
- 1 tsp sesame oil
- to taste fresh ginger (grated)
- 3 cloves garlic
- 2.2 oz soy sauce
- 5.3 oz mirin

Preparation: Teriyaki Tuna Tataki with Sesame
Traditional method.
Peel the garlic cloves and remove the inner germ. Peel 1 inch of ginger root and finely chop it together with the garlic.
In a saucepan, pour the mirin and, over very low heat, bring it to a boil. Allow the liquid to reduce by half. Remove from heat.
Add the sugar and stir until completely dissolved, then add the soy sauce, rice vinegar, sesame oil, and the garlic and ginger mixture. Combine all the ingredients and return to the heat.
Continue cooking over low heat until the sauce is reduced by 1/3. Season with black pepper
Once the sauce has cooled, immerse the tuna fillet in it and let it marinate for 30 minutes.
Then drain it and..
Coat it with sesame seeds on all sides,
pressing well to make the seeds stick.
Heat a skillet or a non-stick griddle over the stove, and once hot, place the fillet on it
A 14 oz fillet should cook for 2 minutes on each side, including the ends.
At the end of cooking, place the fillet on a cutting board and slice it; it should have a rare interior color.
Serve it with a side of vegetables of your choice and soy sauce.

For the teriyaki sauce.
Put the garlic and ginger pieces into the bowl and chop for 12 sec. at speed 7. Use the spatula to gather the mixture, and set it aside in a small bowl.
Without washing the bowl, pour in the mirin, cover with the splash guard, and reduce the amount by cooking for 4 min at 212°F (100°C) speed 1
Add the sugar and mix for 2 min at speed 3.
Then we will add the soy sauce, rice vinegar, sesame oil, and the garlic and ginger mixture.
Mix all the ingredients with the splash guard for 3 min at 212°F (100°C) speed 1. Finally, we’ll add a bit of black pepper.
Only when the sauce has cooled, immerse the tuna fillet in it and let it marinate for 30 minutes.
Then drain it and..
Coat it in sesame seeds on all sides, pressing well to make the seeds stick. Place the fillet in the Varoma tray with parchment paper underneath. Close the lid.
Pour 1 L of water into the bowl, and cook in Varoma for 15 min at speed 1
Place the fillet on a cutting board and slice it.
Serve it with a side of vegetables of your choice and soy sauce.
