Ingredients for Fit Cookies with Dried Fruit
- 1 banana (well ripened)
- 5.3 oz oat flakes
- 3.5 oz pitted dates
- 10 walnut halves
- 1.1 oz almonds (chopped)
- 2 tablespoons honey (maple or agave syrup for the vegan version)
- 1 teaspoon ground cinnamon
- 1 pinch salt

Steps
Preheat the oven to static mode at 350°F and line a baking tray with parchment paper.
Soften the dates in hot water for 10 minutes then Chop them finely with the help of a chopper or a knife.
Mash the banana with a fork in a bowl, add the chopped dates and honey, and mix well.
Finely chop half of the walnuts and the almonds, add them to the banana puree along with the oat flakes, cinnamon, and pinch of salt.
Using a spatula, combine the ingredients well until you get a firm dough, it will be quite sticky but that’s fine.
Take a spoonful of dough, place it on the parchment paper, flatten it with the back of the spoon, and place half of the remaining walnut halves on top.
Bake in the center rack of the oven and cook the Fit cookies with dried fruit without eggs or sugar for 15/20 minutes.
The cookies are ready when the edges are golden and the center is firm to the touch. Keep in mind that when freshly baked and hot, they will be soft, but they will firm up as they cool.
Storage, tips, and variations for Fit cookies with dried fruit
The cookies can be stored in a tin box or under a glass dome for 5 days.
You can substitute honey with agave syrup for a vegan version.
If you don’t have or don’t like dates, you can use dried plums.
Do not overbake them, or they will become too dry. You’ll see that once cool, they will firm up.
