- 3 cups apples (weighed already peeled)
- 2/3 cup 0% fat Greek yogurt
- 1 1/2 tbsp extra virgin olive oil
- 1 packet vanillin
- 3 eggs
- 3/4 cup sugar (or 1/4 cup of stevia or 3/4 cup of erythritol)
- 2 1/2 cups all-purpose flour (Or whole wheat or Fiberpasta)
- 1/3 cup chocolate chips
- 2 tbsps orange juice
- 1 packet baking powder (for sweets)
- 1/2 cup walnuts (weighed already shelled)
- 1/2 cup raisins
- 1/4 cup limoncello

Preparation: My Christmas Tree with Raisins and Apples
Prepare all the ingredients for both executions.
Preheat the oven to 350°F fan mode.
Soak the raisins 30 minutes before using them.
Peel the apples and cut them into cubes, drizzle them with the orange juice and limoncello. Mix.
Sift the flour, with the baking powder and vanillin. Shell the walnuts and chop them coarsely with a knife.
After soaking the raisins, drain them and mix them with the Greek yogurt and olive oil.
After preparing all the ingredients, in a rather large bowl, whisk the eggs with the sugar or sweetener according to your taste.
Once whisked, gradually add the flour, and as soon as the mixture appears smooth and homogeneous, add..

Remove the butterfly whisk and continue at speed 4 for 3 min, while adding the sifted flour with the rest of the powders through the hole.
Now add the apples with all their juice, the walnuts, the raisins with yogurt in the bowl, and insert the reverse and mix for 3 min. speed 2
Transfer the mixture into the tree mold, cover with chocolate chips.
Bake for about 55 minutes. Use the toothpick test in the center to see if it’s cooked.
At the end of cooking, let it cool in the oven with the door open.
Serve at the table once it has cooled.
