Ingredients How to Make the Perfect Grilled Octopus

  • 2.2 lbs octopus
  • 3 tbsps extra virgin olive oil
  • 2 pinches salt
  • to taste chopped parsley

Steps

  • First, clean the octopus well and in the meantime put a pot full of water on the stove.

  • Once it reaches a boil, hold the octopus by the head and immerse the tentacles 2 or 3 times to make them curl.

  • Then immerse it completely, cover with the lid and let it cook over low heat for at least 30 minutes (for 2 octopuses weighing 500 g each, it will be sufficient).

  • At this point, turn off the heat and let it cool in its cooking water.

  • Once cold, cut the tentacles (you can keep the head for other preparations), season the tentacles with salt and extra virgin olive oil.

  • Heat a cast iron grill or griddle very well and cook the octopus pieces for 3 or 4 minutes on each side, turning them with tongs.

  • It should be golden and crispy on the outside, sprinkle with chopped parsley and, if desired, some ground black pepper.

  • Serve it with roasted potatoes or a good mashed potato, a slice of lemon and voilà.

Storage, Tips and Variations How to Make the Perfect Grilled Octopus

It can be stored in the refrigerator for 2 days. You can boil it in advance, even a day before, and grill it just before eating.

You can cook the octopus in a pressure cooker, with just a drizzle of extra virgin olive oil and no water, for 10 minutes from the whistle. Turn off and let the octopus cool inside.

Prefer small octopuses instead of a single 1 kg octopus. Often you can find just the tentacles on sale.
