Savory Bundt Cake with Mushrooms and Smoked Bacon.

Today I made it with champignon mushrooms, but you can use any type of mushroom, raw, which makes it even easier.

- 10.5 oz mushrooms (as desired, but not frozen)
- 6 eggs
- 1 clove garlic
- 1 bunch chopped parsley
- 1/3 cup Parmigiano Reggiano DOP (grated)
- to taste salt
- to taste pepper
- 3.5 oz smoked bacon (cubed)
- 3.5 oz smoked provola cheese (cubed)

Preheat the convection oven to 375°F.
Clean the mushrooms from the soil with a damp cloth, cut off the base, then slice them all except the cap of a few, which…
Slice as shown in the photo. If you are using a silicone mold like mine you can place the mushroom slices like this, otherwise it doesn’t matter.
Transfer the rest of the sliced mushrooms to a bowl and season with salt and pepper.
Add the grated Parmigiano, chopped garlic and parsley, eggs, and….
The diced smoked bacon.
Also dice the provola and add it to the mixture.
Mix everything and pour the mixture into the mold. If you’re using a non-silicone mold, you need to butter and flour it first.
Put it in the preheated oven and bake for 30 minutes.
After the time has passed, let it cool in the oven with the door slightly open.
Once it has cooled down, gently flip the mold onto a plate and unmold it.
