Ingredients for Grandma’s Mascarpone and Jam Tart

  • 2 1/2 cups all-purpose flour
  • 1/2 cup butter (cold and cubed)
  • 3/4 cup powdered sugar
  • 1 egg (large)
  • 1 tsp lemon zest (or orange zest)
  • 2 cups mascarpone
  • 1 egg (large)
  • 1/2 cup granulated sugar
  • 1/3 cup jam (or jelly of choice)

Tools

  • 1 Tart Pan 9.5 inches
  • 1 Rolling Pin
  • 2 Bowls glass

Steps

  • In a large bowl, place the cold butter cut into pieces, add the flour, and mix with your fingertips until you get a sandy mixture.

  • Add the lemon zest, sugar, and egg and mix quickly. Pour the mixture onto the work surface and form a smooth and compact ball, wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

  • After the resting time for the pastry, remove it from the refrigerator and roll it out on a sheet of parchment paper to a thickness of 1/4 inch.

Leaving the parchment paper underneath, line the tart pan with the dough, cutting away any excess with a knife.

  • With a fork, work the mascarpone with the sugar and egg (if desired, you can also add lemon or orange zest here).

Preheat the oven to static mode at 350°F then pour the mascarpone cream into the shell and use the back of a spoon to create swirls.

  • Fill the swirls with your favorite jam or jelly and bake the mascarpone cream tart on the middle shelf.

Bake it for at least 40 minutes checking the level of browning, we preferred the mascarpone cream to remain soft and not brown on top, if you want it browned, extend the baking time by another 5 or 6 minutes.

  • Once baked, let it cool before removing it from the pan and if desired, sprinkle with powdered sugar just before slicing.

Variations for the Mascarpone and Jam Tart

If you prefer a firmer and more golden mascarpone cream, add another egg 🥚 to the cream itself, making it firmer and more golden on the surface.

You can place the jam 🍯 in contact with the pastry and the mascarpone cream on top, or add half mascarpone cream, jam, and more mascarpone cream to form layers.

If you have leftover dough, you can create strips to decorate the tart on top or use a pastry cutter or a mold to create flowers or leaves to decorate the tart by placing them on top of the cream. 🍞
