- 1 1/4 cups water
- 5 oz mandarin juice (or 3 oz of mandarin liqueur)
- 1 egg white
- 3/4 cup sugar (1 cup of erythritol)
- 3 mandarins (grated peel)

Preparation
To make the
The first thing to do is pour the sugar and water into a small pot and add the grated peel of the mandarins or clementines.
Place on the stovetop and bring to a boil over low heat, stirring with the whisk, so that the sugar is well dissolved.
Meanwhile, squeeze the juice and strain it with a strainer.
Beat an egg white until stiff, if you do it with the Thermomix, place the butterfly and whip at speed 4 until it is well whipped, check through the hole.
Now that the egg whites are whipped, add the hot sugar syrup in a thin stream while stirring with the whisks, always keeping the whisks moving.
Once you’ve poured it all in, increase the speed of the whisks and continue to whip for at least 5 minutes.At this point, add the mandarin juice to the syrup little by little and mix it well.
With the Thermomix, do 1 min. speed 2
Place the container or tray in the freezer for 2-3 hours, stirring the sorbet every hour with a spoon.
Once the desired consistency is reached, remove from the freezer and serve.
