Chicken bites with champignon mushrooms.
A classic Italian main course, always appreciated by everyone.
Very easy to make, and also economical, which is a bonus. If served well, bringing it to your table will make a great impression while spending little money. Moreover, with the same recipe, you can use not only chicken bites but also slices of pork loin or veal. If you have other types of mushrooms at home, that’s fine too. Below you will find instructions for both traditional cooking and cooking with the Thermomix.

- 1.3 lbs chicken (breast bites)
- 1.1 lbs mushrooms (champignon or your choice)
- 1 clove garlic
- 1 bunch chopped parsley
- 2 tbsp butter
- 2 tbsp extra virgin olive oil
- to taste salt
- to taste pepper
- 1 2/3 cups flour
- 2 tsp roast herbs
- 1/4 cup white wine

Preparation: Chicken Bites with Mushrooms
Clean the mushrooms, removing the bottom part, the one in contact with the soil, then clean the rest with a damp cloth.
Then slice them.
On a plate, flour the chicken breasts, adding roast herbs. I use those prepared by me; if you want to see how I prepare them click here.
In a pan, put half of the oil and butter, and heat gently.
Add the chicken bites, and, stirring, cook them for about 5 minutes, and season with salt and pepper
After the time, deglaze with white wine, and let it evaporate. Then keep aside in a warm place.
Clean the pan, and put the other half of the oil and butter, along with the minced garlic, and fry gently.

cover. Cook on low heat for about 7 minutes then, add the chicken bites that we kept warm, mix everything together, and cook for just 2 minutes.
Finally, sprinkle the chopped parsley.

Let’s prepare the mushrooms, removing the bottom part, the one in contact with the soil, then clean the rest with a damp cloth.

In the mixing bowl, put the oil and butter, heat: 3 min./248°F/reverse speed 1. The mixing bowl should be well heated.
Distribute the floured meat slices inside the bowl around the blades and cook: 5 min./Varoma/reverse/speed 1 while stirring
Transfer the entire content into a large bowl and redistribute the semi-cooked slices around the blades, taking care to place the less cooked ones at the bottom and the more cooked ones on top.
Return any liquid collected in the bowl back to the mixing bowl, adjust the salt, and cook: 5 min./Varoma/reverse speed 1, stirring occasionally.
Remove the bites from the bowl and place them in a bowl. Add the garlic, mushrooms, salt, and pepper to the bowl, cook: 10 min./248°F/reverse speed 1.
Add the wine and place the cutlets on top of the blades, cook: 5 min./194°F/reverse speed 1
occasionally stirring.
Place the bites on a serving plate, cover with the mushrooms, and serve.
