Holiday cookies with colorful sprinkles.

Traditional recipe and also with the Bimby, and a low GI diet version.
I found a way to keep my little ones entertained.

They enjoy getting their hands in the dough and at the same time each of them personalizes them as they like.

This is a way that, besides keeping them occupied, pleasantly distracts them. You can make the decorations and shapes as you like, even with a cookie cutter, and you can decorate them not just with colorful sprinkles, but also with previously frozen chocolate chips or almond flakes.

  • 1 lemon (zest only, avoid the white part)
  • 1 packet vanilla
  • 1 egg
  • 1 egg yolk
  • 10 tbsp butter (or 2/3 cup Greek yogurt)
  • 2 1/2 cups all-purpose flour (or low GI)
  • 1/2 cup milk
  • 1/2 cup sugar sprinkles (colored)
  • 1 packet baking powder

Preparation: Holiday Cookies with Colorful Sprinkles

Traditional shortcrust pastry procedure.

  • Grate the zest of one lemon, and set it aside.

    Then, on a work surface, make a well with the flour and create a hole in the center.

  • Add the zest, with the butter, salt, egg, and yolk, and knead rather quickly.

  • Compact it with your hands and wrap it in plastic wrap, flattening it slightly.

    Let it rest in the refrigerator for about 1 hour.

  • After the time has elapsed, flour a work surface, divide the dough into several pieces, and roll out each one with a rolling pin to a thickness of 1/16 inch.

  • Have fun with your little ones cutting out the cookies with pre-floured cutters, or with cookie cutters. Alternatively, you can also use an inverted glass.

  • Place parchment paper on each baking sheet, and arrange the cookies side by side.

    Brush them with milk then sprinkle them with colored sprinkles or other types of sprinkles to your liking.

  • Bake in a static oven at 356°F for 10 minutes.

    Therefore, it’s advisable to work the pastry on a cold surface (preferably marble) and with hands that are not excessively warm

  • If it overheats and becomes difficult to work with, reform a ball, wrap it with plastic wrap, and put it in the fridge until it firms up.

  •  Divide the dough into several pieces, and roll out each one with a rolling pin to a thickness of 1/16 inch.

  •  Cut the cookies with pre-floured cutters, or with cookie cutters. Alternatively, you can also use an inverted glass.
