Polish Sweet and Sour Pepper Rolls.
During my last trip to Warsaw, I had the chance to taste this delicious appetizer.
As soon as I got home, I wanted to replicate them.

Ideal for when you want to prepare a buffet, excellent as an aperitif, they will give a fresh taste to your appetizers.

- 3 bell peppers (large and of different colors)
- 2 1/8 cups apple cider vinegar
- 8 1/2 cups water
- 1/3 cup sugar
- 3 1/3 cups breadcrumbs (not very fine)
- 2 oz goat cheese (or sheep cheese)
- 1 clove garlic
- 1 bunch coriander
- 1 teaspoon sweet paprika
- to taste salt
- to taste pepper
- to taste extra virgin olive oil
- to taste mixed salad

Preparation: Polish Sweet and Sour Pepper Rolls
Pour the vinegar, sugar, and a small pinch of salt into a pot.
Bring to a boil.
Meanwhile, cut the peppers into strips of at least 1.5 inches.
When the water boils, immerse the pepper strips, and let them cook for just 2 minutes.
After the time has passed, turn off the heat and let them cool down in the pot, then drain them, (reserving a cup of cooking water) and let them cool spread out on a cloth.
Let’s prepare the filling.
In a bowl, put the breadcrumbs with the coriander and chopped garlic, 3 tablespoons of extra virgin olive oil, soft sheep cheese, paprika, salt, and pepper.
Mix and add a little of the pepper cooking water.
The mixture should have the consistency of a meatball.
Spread the pepper strips on a work surface, place a little filling on top, and roll them up.
Place the rolls in a glass baking dish and cook in the microwave for 5 minutes covered with plastic wrap.
At the end of cooking, let them cool. They taste better when they are cold from the fridge.
Plate with plenty of mixed salad at the base.
