We used crackers as the base, but you can use breadsticks or, even better, taralli to add an extra touch to this savory gorgonzola cheesecake. Instead of cream cheese, you can use robiola or any soft cheese of your choice, and if you really want to indulge, you can use half cream cheese and half mascarpone.

- 6 oz crackers
- 6 tbsp butter
- 6 oz gorgonzola (or gorgonzola and mascarpone)
- 1 1/3 cups cream cheese (or robiola or other)
- to taste black olives
- to taste sun-dried tomatoes in oil

Preparation of Savory Gorgonzola Cheesecake
To prepare the no-bake savory cheesecake, first use a chopper or a rolling pin and a plastic bag to crush the crackers into coarse powder.
Place the cracker powder in a bowl, melt the butter, and mix it in well.
In a 18/20 cm (7-8 inch) springform pan, add the cracker mixture and compact it with the back of a spoon. Put it in the refrigerator to set.
In the same bowl where you mixed the crackers, add the cheeses.
If you like, you can replace half the cream cheese with mascarpone, making your no-bake savory cheesecake even tastier.
Mix well, and if you want to make it even richer, you can also add some chopped olives, perhaps together with drained sun-dried tomatoes in oil.
Now spread the cheese mixture over the cracker base, leveling it well on the surface. Place it back in the refrigerator for at least 2 hours to firm up.
Decorate the cheesecake with pitted olives and slices of sun-dried tomatoes in oil.
You can vary according to your taste by adding, for example, walnuts and arugula, or cooked ham and walnuts.
Before serving, unmold the cheesecake and place it on a serving dish.
