Today’s dish is a vegetarian dish, excellent as a side dish. You can cook it oven-baked, fried, or air-fried.
In the first version, the breading is crispier, while in the second cooking method, it is less crispy.

Ingredients
- 3 eggs
- 0.88 lbs pumpkin (weighed after peeling)
- 0.66 lbs breadcrumbs (seasoned Sicilian style see recipe)
- as needed extra virgin olive oil

Preparation: Breaded Fried or Baked Pumpkin
Peel the pumpkin, and…
slice it thinly.
Weigh it only after cleaning. Season the slices with salt.
Prepare the breadcrumbs following the recipe in this link, click here. Choose breadcrumbs that are not too fine but rather coarse.
Beat the eggs in a plate and adjust with salt and pepper.
dip the slices in the egg,
then in the breadcrumbs, pressing well.
Now prepare for the second breading.
Repeat the operation a second time.
pressing well to compact the 2 breadings.
Now you need to decide whether to bake or fry the slices.
If you decide to bake them, place the slices on a baking pan, drizzle with a little bit of olive oil, and bake in a preheated oven at 375°F for 10 minutes, then turn the slices and finish for another 5 minutes.
If you want to fry them instead, put plenty of olive oil in a pan, heat it, and cook the slices on both sides until well browned.
Serve hot. Here’s the Breaded Fried or Baked Pumpkin ready.
Place the slices in the air fryer tray and cook at 400°F for 15 minutes
