Today I want to delight you with a beautiful main course.
Mezze maniche, after spaghettoni, are my favorite type of pasta, and after trying out all kinds of pestos, I wanted to venture into this one with flat green beans.
This type of green bean should not only be consumed for their deliciousness, but also for their extraordinary nutritional content.
Apart from a high content of plant proteins making them perfect as meat substitutes, they are rich in fiber, potassium, magnesium, iron, phosphorus, vitamin C, and K.
I will show you both the traditional preparation and the one with the Thermomix.

  • 2 cloves garlic
  • to taste salt
  • to taste water
  • 1 bunch chopped parsley
  • 1 chili pepper
  • 0.7 oz Pecorino Romano (grated)
  • 4.2 oz pasta (mezze maniche)

Preparation

Traditional Cooking

  • Wash the flat green beans, and trim the ends,

  • Put a pot with water and salt on the heat, and bring to a boil.

    Once it boils, add the green beans, and cook them for 10 minutes.

  • After this time, drain them without discarding the cooking water, and cool them under running water, so they retain their bright green color.

  • Peel the garlic and chop the parsley.

    If you like, add some chopped chili pepper.

  • Meanwhile, in a pan, put olive oil, the chili pepper, the garlic, and chopped parsley, and let it flavor for 1 minute, then…

  • Add the green beans, adjust the salt, and sauté in the pan to flavor.

  • Put the green bean cooking water back on the heat, and that’s where we’ll cook the pasta, and in the meantime…

  • Take half of the green beans and chop them coarsely, and set them aside in a bowl, while with the rest…

  • We will make the pesto, adding the Pecorino Romano and a little of the sauce from the pan.

  • We will combine the pesto with the chopped green beans, and mix them. If you like the mixture more liquid, you can add a little pasta cooking water.

  • At this point, we will drain the pasta and pour it into the same pan where we cooked the green beans, add the pesto and the green beans, and blend on the heat for 1 minute.

  • We will serve immediately.

    Traditional Cooking.

  • Wash the flat green beans, and trim the ends

  • Put 250 g of water into the bowl, place the basket and put the green beans inside it.

  • Close the bowl with the lid and steam: 7 min./Varoma/speed 1. Remove the basket with the help of the spatula, empty and dry the bowl.

  • Add, extra virgin olive oil and cooked green beans. Place the splash guard on the bowl lid and set to High temperature

  • Take half of the green beans and chop them coarsely, and set them aside in a bowl, while with the rest…

  • We will make the pesto, adding the Pecorino Romano and a little of the sauce from the pan. 20 sec speed 10.

  • Gather with the spatula and combine with the previously set aside green beans,

  • At this point, we will cook and drain the pasta and pour it into a pan, add the pesto and the green beans, and blend on the heat for 1 minute.

  • Serve immediately.
