Ingredients
- 3/4 cup corn flour
- 1/3 cup all-purpose flour
- 1/3 cup milk
- 2 eggs (large)
- 3 tablespoons extra virgin olive oil (or vegetable oil)
- 2 tablespoons Grana Padano cheese, grated
- 1 tablespoon baking powder for savory recipes
- 9 oz chard (fresh, cleaned)
- 3.5 oz cooked ham
- salt
- pepper
Tools
- Cake Pan or loaf pan
- Parchment paper
- Pan
- Bowl
- Hand whisk
Preparation
Wash the chard and place it in a pan with a drizzle of oil and a pinch of salt. Cook them for a few minutes until soft (1).
Let them cool, remove any excess liquid, then chop them finely with a knife.
Mix the corn flour, all-purpose flour, baking powder, and grated Grana Padano in a bowl.
Crack the eggs into a bowl, add salt, pepper, 3 tablespoons of oil, and milk. Lightly beat with a whisk.
Gradually add the dry ingredients, incorporating them with the whisk or a spoon (2).
Cut the cooked ham into small cubes or strips, add it to the mixture and also incorporate the previously cooked chard (3).
Line the pan with parchment paper and pour in the batter, leveling it with a spatula (4).
Place the savory pie in a static oven at 356°F and bake it for 40-45 minutes. Adjust the time according to your oven and the pan used (if using a round cake pan, it will likely take a few minutes less).
The savory pie with corn flour and chard is ready, let it cool slightly before slicing and serving.
Advice and Variations
You can replace the chard with spinach, or with a mix of wild herbs.
You can omit the cooked ham, or replace it with another cold cut of your choice.
For this recipe, I recommend using a finely ground corn flour, such as fioretto or fumetto.
FAQ (Questions and Answers)
Can I use frozen chard or spinach?
If fresh products are unavailable, you can use frozen, making sure to dry them well in the pan from excess water.
Can I prepare the pie in advance?
Of course, you can prepare it the day before, store it in the refrigerator, and reheat it in the oven when needed.
