Rabbit Saddle with Green Cream.
Today I present to you a refined and delicate dish. Refined because from one rabbit you will only get 2 rolls and delicate because rabbit meat is one of the lightest and most dietary meats I know apart from fish.
All on a really delicate and tasty vegetable cream.
100 g of raw rabbit meat has a caloric intake of about 118 Calories, so it is indicated in low-calorie diets.
It is a source of high biological value proteins and can therefore be safely included in diets. As for the vitamin intake, rabbit meat offers good concentrations of vitamin B3 or Niacin, while from a mineral point of view it offers decent amounts of phosphorus, potassium, and iron. Given its composition, this meat can be consumed by people of all ages and is also suitable for convalescence nutrition.

- 14 oz rabbit saddles (2 pieces)
- 3.5 oz bacon (cubed)
- 2 oz breadcrumbs (Sicilian flavored)
- 4 tbsps extra virgin olive oil
- 1 cup cups peas
- 1 carrot
- 1 onion
- 1 stalk celery
- 1 tsp bouillon cube (vegetable see recipe)
- 1/4 cup dry white wine
- 0.7 oz roast herbs
- 1 clove garlic
- 1 sprig rosemary
- to taste bay leaf

Preparation of Rabbit Saddle with Green Cream
Choose a local rabbit, if you can, cut the saddles and make the rest in sweet and sour. Click here
You can have the saddles cut by the butcher.
Sprinkle them with herbs, here’s how I make mine, click here
Meanwhile, chop onion, carrot, and celery, and set aside.
Prepare Sicilian flavored breadcrumbs with my recipe click.
Moisten it with a tablespoon of oil and one of water, set aside.
On each saddle, place a spoonful of diced bacon and a little Sicilian flavored breadcrumbs.
Tie them with kitchen twine.
In a non-stick pan, now pour the extra virgin olive oil, the remaining bacon, the whole clove of garlic, the bay leaf, and a sprig of rosemary.
Sauté and ..
place the saddles on the pan, brown them on all sides, until they turn white.
Deglaze with wine and let it evaporate.
At this point, set the saddles aside, and..
preserve their cooking liquid.
In the same pan, pour extra virgin olive oil and add the chopped mix, sauté for 3 minutes, then..
add the peas and the cooking liquid from the saddles,
Instead of using salt add a teaspoon of vegetable bouillon, here is my recipe, click
Pour an espresso cup of water, cover the pan and let it cook for 2 minutes, then as soon as it comes to a boil, add the saddles and continue cooking for 10 minutes.
As soon as cooking is complete, remove the saddles from the pan, and let them cool on the cutting board,
Then blend the contents of the pan.
We obtained the green cream.
Cut each roll diagonally in half and serve it hot over a ladle of the green cream.
