Homemade Chicken Spinach Patties
How many times have our children asked us for this dish… my niece would eat only these. But reading on the packages “mechanically separated” raises some doubts.
Here’s the solution.
I prepare them with chicken, meat, fish, and even ham.
The play of flavors is done by the other ingredients, and I’m not talking about the spinach which is almost flavorless, but the addition of herbs see my recipe and the Sicilian-style seasoned breadcrumbs see recipe.
For cooking, you can do it in a skillet without oil, in the oven, in a microwave fryer, or if you really can’t do without it, fried.

Homemade Chicken Spinach Patties
- 9 oz chicken (breast)
- 2.5 oz Parmigiano Reggiano DOP (grated)
- 5.3 oz spinach, cooked, boiled (well squeezed)
- 3 eggs
- 1.75 oz breadcrumbs
- 1 oz Pecorino Romano (grated)
- to taste pepper
- Half teaspoon salt
- 3.5 oz corn flakes (Or spelt flakes if diabetic)

Preparation: Homemade Chicken Spinach Patties
Cut the chicken breast into pieces, and mix them with the roast herb blend. See recipe.
Meanwhile ..
If you have fresh spinach, wash them and wilt them in a pan with a pinch of salt.
Then squeeze them.
If you have them frozen, it’s fine too, let them thaw and sauté them in a pan with a pinch of salt and then squeeze them.
Chop the corn flakes, and set them aside in a rather large bowl
Put in the chopper: the Parmigiano Reggiano, chicken breast, and spinach.
Add 1 egg, 1.75 oz of breadcrumbs, ½ teaspoon of salt, and a pinch of pepper.
Chop everything and then transfer the mixture to a bowl.
Check the dough: if it is too soft, add 1-2 tablespoons of breadcrumbs.
Divide the dough into 5 balls, and form patties. Beat the remaining 2 eggs on a plate.
