Potatoes with Homemade Mediterranean Flavors.
Baked or air fryer.
This recipe, which might seem trivial and simple, actually has rules to follow.
First of all, the ingredients must be top quality, like new potatoes, I prefer to use Silane ones.
There will be the possibility for those who cannot make the spices at home to use the commercial ones,
While for those lucky enough to find them, I’ll show you how.
The Mediterranean flavors that I grow on my terrace exposed to the sun from morning to evening are:
Rosemary, sage, wild fennel, garlic, chives, bay leaf.

- 1.32 lbs potatoes (Silane)
- 1.76 oz roast spices
- 1 sprig rosemary
- 2 tbsps extra virgin olive oil
- to taste salt
- to taste pepper
- 1 clove garlic
- 0.35 oz sage
- 0.18 oz chives
- 5.29 oz coarse salt
- 0.18 oz parsley
- 0.18 oz basil
- 0.18 oz lemon thyme
- 4 leaves bay leaf
- 1 sprig wild fennel

- Parchment paper
- Knife

Preparation
Let’s prepare the spices at home
Take the chopper, and put all the herbs and 1 garlic clove in it, pour in the coarse salt and chop until you get a fine powder.
Peel the potatoes and cut them into wedges, rinse them under running water, then drain and place them in a bowl.
Pour over the EVO oil, a pinch of salt and pepper, and about 1 generous tablespoon of spices.
Massage the potatoes and let them rest for 5 minutes.
Meanwhile, preheat the oven to 375°F with convection.
In a baking sheet, place a sheet of parchment paper previously wet and wrung out. Pour the potatoes over it, and a few sprigs of rosemary.
Bake for 15 minutes, then change the cooking mode and turn on the grill still at 375°F for another 5 minutes.
They should look like this, but if you want them even more golden, leave them under the grill for a few more minutes, but be careful not to burn them.
Serve hot, as a side dish for meat or fish.
In an air fryer, cook for 20 minutes at 392°F
