Steps for preparing creamy pasta with peas and zucchini
Chop the onion. I used fresh Tropea onion, but you can use whatever you like or have at home. Sauté it in a pan with a drizzle of oil. Add the peas, fresh or frozen. Let them season and add some water, salt, and pepper.
Add the diced zucchini to the peas and cook until the zucchini and peas are soft. Meanwhile, boil the pasta.
Place half of the vegetables in a tall-sided container. Add a ladle of pasta cooking water and blend everything with the immersion blender. Drain the pasta al dente and mix with whole and blended peas and zucchini. Scent with lemon zest, season with salt and pepper, toss the pasta for a minute, add a splash of raw oil and serve.
