  • 3.5 oz cherry tomatoes
  • 1 clove garlic
  • 1 oz ricotta cheese
  • 1 pinch salt
  • 2 tbsps extra virgin olive oil
  • 1.75 oz Parmesan cheese

  • I started by picking basil from my terrace in the morning, preferring the tips because they are more tender.

  • Some time before, I put the Bimby jug in the fridge to cool it, thus preventing the pesto from overheating and turning dark.

  • After removing the tougher stems, I washed it several times, and then let it dry on a dishcloth.

  • Then I put the leaves and 1 clove of garlic in the Bimby jug, you can put it in your blender.

  • You can add the Parmesan cheese now or sprinkle it on the pasta later, then add the ricotta, and blend with the Bimby for 1 minute at speed 5, going up to 10.

    If you don’t have a Bimby, blend until the mixture looks smooth and homogeneous.
