- 1 egg
- 1/3 cup Parmesan cheese
- as needed milk
- 1 lemon
- 1/3 cup breadcrumbs (or stale bread)
How to Make Lemon Chicken Meatballs
In a large bowl, place the ground chicken, egg, salt, Parmesan cheese, breadcrumbs, milk, and grated lemon zest.
Mix well with your hands until all the ingredients are combined.
Take a small portion of meat and form into small meatballs by rolling them with your hands. Then coat them in flour.
Place the meatballs in a pan with a drizzle of olive oil, browning them for a few minutes and turning often to prevent sticking. Deglaze with wine and let it evaporate.
Shortly before the end of cooking, squeeze a lemon and pour the juice into the pan. Continue cooking for another 3 minutes.
If you like, you can garnish with chopped parsley.
