Here’s the solution: Just freeze the fruit cut into pieces, put it in bags and wait until it weighs 500 grams.
Moreover, you can make this ice cream with any fruit, even a mix.

- 2/3 cup Greek yogurt
- 1 egg white
- Half lemon (zest grated)
- Half lemon (juice)
- 1/4 cup erythritol (or sugar)

Preparation
Traditional Version
Wash the strawberries, cut them into pieces, and freeze them for at least 6 hours.
When you are sure they are frozen, start preparing all the ingredients. Wash the lemon well.
Grate half the lemon, squeeze half the juice and strain it.
Pour the yogurt into a bowl, add the lemon zest and sweetener, and mix well.
Separate the egg white and set it aside.
Put the frozen strawberries in the food processor and grind them as if they were ice.
Then put them in a rather large bowl, add all the ingredients, and whisk until stiff peaks form.
Pour the ice cream into a plastic container or enjoy it.

Grate half the lemon for 8 sec speed 8, gather with the spatula and then squeeze half the juice and strain it. Leave everything in the bowl.
Separate the egg white and set it aside.
Put the frozen strawberries in the bowl together with all the ingredients, and chop for 40 sec, speed 5 using the spatula instead of the measuring cup.
During this operation, scrape the edges of the bowl.
Pour half of the mixture into a bowl, mount the butterfly, remove the measuring cup, and run for 3 minutes at speed 3.5, adding the rest of the mixture little by little every 5 seconds.
Pour the ice cream into a plastic container or enjoy it.
