Ingredients for Marinated Primo Sale
- 6.35 oz Primo Sale
- 2 tbsp apple cider vinegar
- 1 tbsp extra virgin olive oil
- 2 tsp chives (dried)
- 1 tsp basil (dried)
- 1 pinch fine salt
- 1 pinch mixed peppercorns (to grind freshly)

Steps to Prepare Marinated Primo Sale
First, drain the Primo Sale from its brine and pat it well with paper towels.
Cut the Primo Sale first into strips and then into pieces and place them in a bowl.
In a small bowl, pour the oil, vinegar, salt, pepper, chives, and basil, and mix quickly to create an emulsion.
Pour the emulsion over the Primo Sale and mix well with two spoons. Cover with plastic wrap and place in the fridge to marinate for at least 4 hours.
After the marinating time in the fridge, remove the plastic wrap, give it a good stir, and serve as you like: on its own (for appetizers and aperitifs or as a second course) or as an addition to salads or cold summer main dishes.
Serve the marinated Primo Sale with its remaining marinade (most is absorbed by the cheese).
