  • 1 cup breadcrumbs (seasoned Sicilian-style see recipe)
  • 2 eggs
  • 1 cup zucchini (grated and squeezed)
  • 2 tbsp extra virgin olive oil
  • 4 tbsp water
  • to taste salt
  • to taste pepper
  • to taste chopped parsley

Swordfish and Zucchini Burgers

  • The first step is to season the breadcrumbs Sicilian-style, and for this, see the recipe by clicking here

  • The second step is to complete its seasoning for the burgers by adding EVO oil and water.

  • Now we will take care of the fish, which must be very fresh.

  • Remove the skin and cut it first into chunks and then

  • Place it in the food processor bowl and chop it. If you have a Bimby, you can chop it 3 times at turbo speed for 2 seconds.

  • Now wash the zucchini, remove their tips, and grate them.

  • Combine the fish mince, eggs, zucchini, and breadcrumbs together and knead until you get a homogeneous mixture.

  • Place parchment paper on the baking sheet, and with the help of a moistened pastry ring and a spoon, form the burgers by placing the right amount of mixture inside and leveling it with the back of the spoon.

  • When you have finished all the mixture, turn the oven on to 350°F static

  • Bake for about 7 minutes per side.

  • Serve hot with a side dish of your choice.
