Mini Margherita Pizzas ideal for kids.
Today I’ll show you my recipe for slow-rising mini pizzas, thus using minimal yeast.
If you like a soft dough, this is ideal; with this recipe, you’ll easily please your little ones. Perfect for a party, birthday, or even as an appetizer.
We’ll bake them in the home oven.
But let’s talk a bit about its origins:
In June 1889, to honor the Queen of Italy, Margherita of Savoy, chef Raffaele Esposito prepared the “Pizza Margherita,” a pizza topped with tomatoes, mozzarella, and basil, to represent the colors of the Italian flag.
Since then, much time has passed, but this is the main dish that represents us worldwide.
In this recipe, I’ll show you both the classic dough method and the Bimby method.

- 1.75 cups water
- 1.2 cups semolina flour
- 2 cups Manitoba flour
- 2 cups all-purpose flour
- 0.18 oz fresh yeast
- 0.7 oz salt
- 1 tsp sugar
- 2 tsp extra virgin olive oil
- 14 oz provola cheese
- 1.3 cups tomato sauce
- to taste salt
- 10 leaves basil
- to taste extra virgin olive oil

Preparation of Mini Margherita Pizzas ideal for kids
First, weigh the 3 types of flour and mix them well.
Dissolve the yeast in a little of the water, preferably warm.
Add the sugar and a handful of the flour mixture, stir, and..
Cover it with plastic wrap.
Let the starter rest for 30 minutes; after this time, it will look like this. Now, we can knead.
If you have a Bimby, put these ingredients in the bowl at 98°F for 3 min. at speed 3. Then, let the starter rest directly in the bowl. From here on, the procedures are the same.
After the time has passed, put in the mixer or Bimby bowl: water, flour, salt, and oil, and let it go for 6 minutes.
With the Bimby 3 minutes on kneading mode with the starter already in the bowl.
Meanwhile, brush oil on a bowl.

Give it a round shape, make a cross on top to help with rising, cover with plastic wrap, and let it rest for 30 minutes.
After the first rise, make 12 balls, brush them with oil, cover with plastic wrap, place them in a warm place under a cloth, and let rise for about 11 hours.
Meanwhile, prepare the tomato sauce seasoned with salt, oil, and oregano if you like.
In a food processor, chop the provola cheese very finely.
When the dough has risen, preheat the oven in pizza mode at 428°F. If you don’t have pizza mode, set it to static.
Place the balls on a floured work surface and
Use your fingers to spread the dough from the center outward, as you would for large pizzas.
On each mini pizza, put 1 tablespoon of tomato sauce, then bake for 6 minutes.
After 6 minutes, take out the baking sheet, add the provola cheese, and brush with oil, then return to the oven to finish baking.
Serve hot, and you’ll smell the aroma and especially the taste; your kids will be thrilled.
