Preparation of Typical Sicilian Stuffed Green Beans
Start by trimming the green beans, check if they have any strings, and if so, be sure to remove them. Wash several times under running water.
Put a rather large pot on the stove with water and salt as if you were cooking pasta.
Bring to a boil, and only then add the green beans. Cover and let cook for about 10 minutes.
However, this depends on the green beans and their seasonality, so check and if necessary extend the cooking time.
If you are using frozen green beans, then immerse them in boiling water directly frozen, and shorten the cooking times.
In any case, when they are cooked, drain them, and cool them under plenty of cold water to stop the cooking.
In the meantime, while the green beans are cooling, wash the cherry tomatoes, and…
cut them into pieces.
In the same pot or in a pan, pour in the oil you have, peel the garlic, and slice it so it will be easier to identify and remove it later, let it fry for 1 minute.
As soon as you smell the aroma of garlic, pour in the chopped cherry tomatoes, and you’ll hear the sizzle, stir for 1 minute, and..
Adjust the salt. then…
add the green beans.
Stir well and cook for only 2 minutes.
Then turn off the heat and..
With the flame off, sprinkle Sicilian seasoned breadcrumbs, stir, let cool and…
Serve with plenty of basil.
