It should be served cold, so you can prepare it in advance, even the day before, and it would be better, so it absorbs the sweet and sour flavor better.
The orange pumpkin is a health booster, its mineral salts include calcium, phosphorus, potassium, zinc, selenium, and magnesium, among others, it is naturally rich in beta-carotene, a precursor of Vitamin A with antioxidant properties, B Vitamins, and Vitamin C.

  • 2 cloves Garlic (large)
  • 1 tbsp Honey (Or erythritol)
  • 3 tbsp Balsamic vinegar (Or apple cider)
  • to taste Salt
  • 3.5 tbsp extra virgin olive oil

Preparation of Sicilian Sweet and Sour Pumpkin

  • Peel the pumpkin, and remove all seeds and fibers.

  • After cleaning, slice it.

  • Peel the garlic cloves, and slice them lengthwise.

    In a non-stick pan, put some extra virgin olive oil, and a slice of garlic, as soon as it sizzles, add the pumpkin slices and cook them 2-3 minutes per side.

  • As they cook, you will notice the garlic changes color, then you must remove it and always add a new slice.

  • Dissolve the honey in the balsamic vinegar until well mixed.

    or apple cider vinegar and sweetener.

  • Raise the heat, toss the pumpkin in the pan and let all the alcohol evaporate. Finally, adjust the salt.
