Sugar-Free and Fat-Free Apple Cake.
The classic cake that every mom or grandma eventually prepares for their family.
Today, I will propose a light version, without sugar or fat. To sweeten, I will use a bit of sweetener and then the many apples inside create a softness in the mouth that sends you into ecstasy.

- 1.41 oz sweetener (Stevia or 120 erythritol)
- 1 lemon (Grated peel)
- 3 eggs
- 1 Lemon Juice
- 5.29 oz plain natural yogurt
- 1.67 cups all-purpose flour (Or low glycemic index)
- 1 packet baking powder
- 1 pinch salt
- 1 packet vanillin

- Springform Pan 9.5 or 10.25 inches
- Parchment Paper

Preparation of the Sugar-Free and Fat-Free Apple Cake
First, turn on the oven to static mode, at 356°F.
Grate the peel of one lemon and collect the juice,
Peel the apples and slice them, place them in a bowl, and pour the lemon juice over them, mixing well so the lemon blends well with the apples to prevent browning.
Place the lemon peel, sweetener, and eggs in the stand mixer, or you can mix with a hand mixer in a bowl, and start whipping.
When the mixture is whipped, add the flour little by little and continue whipping.
Add the vanillin, yogurt, and salt, and when these ingredients are well blended, add the baking powder.
As soon as the mixture appears smooth and homogeneous, turn off the stand mixer.
Line the springform pan with crumpled parchment paper so it adheres better, or butter and flour it, and…
Pour half of the mixture.
Make a layer of apple slices, and…
Pour in the rest of the mixture.
Level well, and …
Finish with the remaining apples.
Place the pan in the preheated oven at 356°F for about 40/45 minutes. After this time, do the toothpick test; if it comes out dry, you can remove the cake, otherwise, continue baking for a few more minutes.
When the cake is ready, take it out and let it cool.
Serve at room temperature.

First, turn on the oven to static mode, at 356°F. Put the sweetener and the peel of a lemon in the Bimby bowl for 10 seconds at speed 8.
Separately, collect the juice and set it aside.
Peel the apples and slice them, place them in a bowl, and pour the lemon juice over them, mixing well so the lemon blends well with the apples to prevent browning. I saved one with the peel for the final decoration.
Attach the butterfly whisk and along with the lemon peel and sweetener, add the egg whites and mix for 4 minutes at speed 3,
After the time has passed, add the yolks one by one through the hole with the Bimby speed at 4 for another 2 minutes. Remove the butterfly.
When the mixture is whipped, add the flour little by little and continue mixing at speed 3 for 2 minutes; once all the flour is incorporated, you can add the yogurt, salt, and vanillin, and continue mixing at speed 3 for 3 minutes.
Pour half of the mixture, make a layer of apple slices, and pour in the rest of the mixture.
Finish with the last apple slices
Bake in a static oven at 356°F for about 40/45 minutes. After this time, do the toothpick test; if it comes out dry, you can remove the cake, otherwise, continue baking for a few more minutes.
