Nutella Flavored Semifreddo Tile.
When I was a little girl, in my grandma Maria’s pastry shop, they made semi-frozen desserts and truffles.
I grew up with the smell of vanillin and anise instead of children’s cologne. A flavor dear to me was Gianduia.
I managed to get close with this recipe by replacing Gianduia with Nutella, which makes the mixture elastic and very similar to the flavors of the ice cream shop of the old days.
Traditional recipe and with Thermomix, with pasteurized eggs.

  • 2 packets vanillin
  • 300 g Nutella®
  • to taste cookies (as desired)
  • 6 egg yolks
  • 1/4 cup water

Preparation of the Nutella Flavored Semifreddo Tile

Traditional recipe

  • 30 minutes before, place the cream in the freezer. Then add powdered sugar and vanillin and start whipping.

    When whipped, place it in a bowl and store in the fridge.

  • Heat Nutella in a bain-marie. This only during winter months.

  • Let’s pasteurize the eggs

    Separate the yolks from the whites. Whisk the yolks with 1/4 cup of water.

    Once frothy, take a pot with water, let it simmer gently, and place the bowl with the eggs inside, continuing to whisk for another 4 minutes while the water below gently boils. Set aside.

  • Take the whipped cream out of the fridge, and gently fold in the pasteurized eggs with a spatula from top to bottom, then add the Nutella.

  • Until a smooth and homogeneous mixture is obtained.

  • Line the mold with plastic wrap, making it easier when you have to extract it.

  • Place cookies as desired on the bottom.

  • Pour the cream, and place in the freezer for at least 12 hours.

  • Since it’s a tile, no other decorations are needed, but if you want, you can complete it with dollops of whipped cream or a sprinkle of cocoa powder.

  • Make space in the freezer, and freeze the cream and the jug 30 minutes before.

    After the time has passed, insert the butterfly and pour the cream into the jug, then add powdered sugar and vanillin

  • Whip without a measuring cup at speed 3.5 until you see through the hole that the cream is ready. Be careful not to let it curdle, or you’ll have sweet butter.

    Place the yolks and water in the jug without the butterfly for 3 min. speed 4.

    Then another 4 minutes at 176°F speed 3.

    Set aside.

  • At this point, take out the whipped cream from the fridge, and gently fold in the pasteurized eggs with a spatula from top to bottom, then add the Nutella.
