  • 1 clove garlic

Steps for Preparing Gratinated Peppers Cooked in Air Fryer

  • Wash the peppers and pierce them with a fork. Place them in the air fryer. Cook them at 392°F for about twenty minutes, turning them halfway through cooking. Once cooked, immediately place them in paper bags and close them tightly. Let them cool.

  • Meanwhile, finely chop the aromatic herbs you like (I use chives and parsley) with garlic and rinsed and dried salted capers.

  • When the peppers are cold, remove the seeds and skin that will come off easily. Cut them into strips. Season them with the chopped mixture, extra virgin olive oil, salt, and pepper, and garnish with grated lemon peel. Finish with pitted Taggiasca olives. Give it a mix and cover, letting it rest for at least 30 minutes or until it’s time to serve. They are also perfect for enriching crostini or dressing pasta.
