  • 4 slices cooked ham (cut into 4 parts)
  • 3.5 oz smoked provola cheese (thinly sliced)
  • 2 eggs
  • 1 cup flour
  • 7 oz breadcrumbs (Sicilian style seasoned)

Let’s start by preparing the Sicilian style seasoned breadcrumbs

  • In a rather large bowl, place the breadcrumbs that are not too fine, grated pecorino cheese, chopped parsley and garlic, a pinch of salt, and a pinch of pepper. Mix everything.

  • Now arrange the slices of pork loin on a work surface.

  • Put a bit of ham on each slice.

  • Then half a slice of smoked provola cheese.

  • Then overlap another slice of ham, and a sprinkle of salt, pepper, and herbs to taste.

  • Then close with another slice of pork loin.

  • At this point, put the flour on a plate, and bread the chops.

  • Dip them in the beaten egg.

  • And finally in the seasoned breadcrumbs, pressing well to seal everything.
