  • 4 Zucchini
  • 3.5 oz beef (lean ground)
  • 1 egg
  • 2 tbsps breadcrumbs (Sicilian style seasoned)
  • 1.75 oz scamorza cheese
  • 3 tbsps tomato sauce
  • 3 tbsps extra virgin olive oil
  • to taste salt
  • 1 bunch Parsley
  • 1 clove Garlic
  • 3 tsps Pecorino Romano
  • Half onion
  • to taste pepper

Preparation of Oven-Baked Zucchini Stuffed with Meat

  • Wash, dry, and trim the ends of the zucchini.

  • Cut them in half lengthwise, place them in a baking dish or in the air fryer basket, and cook in the microwave for 7 minutes, or in the air fryer at 392°F for 6 minutes.

    Then let them cool.

  • After the first cooking, scoop out each zucchini being careful not to break the edges.

  • Sprinkle a little salt on the hollowed zucchini and turn them upside down to drain excess liquid while continuing with the preparation.

  • Collect the pulp in a bowl and season with salt and pepper.

  • Next, in a non-stick pan, put a drizzle of extra virgin olive oil and a half clove of garlic without the germ.

  • Add the pulp and stew it for a few minutes. Then remove the garlic and discard it.

  • Chop the pulp.

  • In another pan, put a drizzle of extra virgin olive oil, and the onion chopped finely, and sauté for 2 minutes

  • Add the minced meat to the sauté and cook it until it changes color. Season with salt and pepper and add the tomato sauce.

  • Incorporate the zucchini pulp, the seasoned breadcrumbs, and the grated Pecorino, mix. Let it cool.

  • Stuff all the zucchini.

  • For traditional oven cooking, place them in a baking tray with parchment paper, and a drizzle of extra virgin olive oil. Add diced provola cheese.

  • Bake in the oven at 356°F for about 20 minutes. Then let cool slightly.

  • In the air fryer, arrange the stuffed zucchini in the basket, spray with oil, and cook at 356°F for 10 minutes.
