Preparation When an Omelette Becomes Art

  • Wash the vegetables, remove their stems, and the shallot skin

  • Dice the zucchini

  • Cut the bell peppers into small squares

  • Cut the cherry tomatoes in half.

  • Chop the parsley, garlic, shallot, and chives.

  • Preheat the oven to 356°F (180°C) with a fan setting.

    In a bowl, combine the bell peppers, zucchini, grated Pecorino Romano, and the chopped herbs you prepared earlier

  • Break 4 eggs, and add a bit of salt and pepper according to your taste.

    Mix everything well.

  • Transfer the mixture into a round baking pan lined with parchment paper. Decorate with cherry tomatoes.

    Then bake in a fan oven at 356°F (180°C) for 20 minutes. The time depends on the oven and the pan’s size, so I recommend inserting a toothpick in the center; if it comes out dry, the omelette is ready.

  • Once it has cooled slightly, gently remove the parchment paper and place it on a serving plate.
